Chef Jason

Chef Jason Miyanaga born and raised in Hawaii graduated from the Kapiolani Community College Culinary Arts with a concentration in institutional Food Service Management. Jason opened the Coffee Factory in downtown Honolulu in 2004, slowly introducing fresh local fish to his lunch menu over the years.  He monitors the Honolulu fish auction daily for fresh ahi, aku, marlin, ono, monchong, opah and other fish that he turns into custom poke, seared ahi, sashimi platters and other seafood delights.
